One long Table, eighteen seats, a local chef working the kitchen. Everything on the menu comes from within a hundred miles of Sheridan — the beef, the roots, the greens, the cheese, the bread, the apples for the tart.
We start in the Parlor with something warm to drink. We sit down at the Table at 6:30. The menu is whatever the chef wanted to cook that week. Wine pairings if you want them, sparkling water if you don’t. The dinner usually runs about three hours. Nobody’s in a hurry.
